Spiced Vanilla Granola

This is my favorite granola recipe.  I have been making granola for about seven years and this one is my very favorite. We also like ours to be chunkier so I’ve learned a few tricks that help us make it the way we like it.

Spiced Vanilla Granola

Combine in a saucepan:  1/3 cup coconut oil
                                        1/4 cup maple syrup
                                        1 cup brown sugar
  Bring to a simmer over medium heat.  Remove from heat and stir in:   1 T. vanilla

While it is coming to a simmer I combine the following in a large bowl:

4 cups rolled oats
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup ground flaxseed
1 cup chopped nuts of choice ( I usually use sliced almonds)
1/4 cup shredded coconut

Pour sauce over mixture in bowl and mix well. I use my hands to work it all in good.  Spread on cookie sheets.  I usually make a triple batch and spread over four cookie sheets.  Then bake at 300 for 18 minutes. Don’t stir and let it cool before breaking it up.

I usually have dried fruit and sometimes chocolate chips the kids can add in to taste.  I have been enjoying adding in some black walnuts my friend gave me in it..YUM!  Serve it warm or cold.

This is the way I like it, but granola is one of those things that you can totally customize to your taste. My parents like theirs more done and crumbled up.
